Here is a step-by-step recipe for Vegetable Manchurian gravy, that I followed.

Ingredients
- For vegetable Manchurian balls:
– vegetables of your choice : carrot, cabbage, capsicum; around 1 1/2 cup in total
– spring onion 2 tablespoon
– all purpose flour or maida 1/2 cup
– cornflour 2-3 tablespoon
- For Manchurian gravy:
– 1 big onion chopped
– ginger or adrak 1 tablespoon
– garlic or lahsun 1 tablespoon
– 3 green chillies or Hari Mirch
– cornflour 1 tablespoon
– soya sauce 1/2 tablespoon
– vinegar 1/2 tablespoon
– water or vegetable stock 1/2 cup or based on the consistency of the gravy desired
– salt to taste
How to make Vegetable Manchurian gravy [Step-by-step recipe with Photos]
- For vegetable Manchurian balls:
- First of all, boil the vegetables for around 5-10 mins. This step is optional, but I prefer to cook the vegetables a bit before making balls. Also, the remaining can be used as the vegetable stalk.
- Drain the vegetables and keep the stalk aside to be used for the gravy.
- Mix all the ingredients for Manchurian ball in a bowl. The mixture should turn out to be of semi-dry consistency. There is no need to add extra water to it.
- Make small round balls from this mixture
- Shallow fry the balls and you can drain them. Keep them aside for a while and now prepare the sauce/gravy
- For Manchurian gravy:
- First of all, heat the oil. Now add garlic, ginger into it and cook them till they are golden brown.
- Furthermore, add onion and green chillies into it
- Add vegetable stock or water, make sure this has a few boiled veggies from the ball, I like it this way.
- Now to this, add soya sauce and vinegar, and cook well for 1-2 mins
- Once done, add corn flour to the mixture and stir continuously to make it boil and turn into thicker sauce.
- Add salt as per your taste, and let it cook for a while
- Finally, put the Manchurian balls into the gravy and let it soak in for a minute or so
- Garnish and serve it hot 🙂
Note: Before adding corn flour into gravy, mix it in water and then add it to avoid lumps, also boil after adding.
